My Favorite Summer Salsa Recipe
This is a salsa I love to make when I see the fresh new ears of corn come out in the summer season. It's fast and easy and of course tasty.

Ingredients
  • 3 ears of corn
  • 3 ripe tomatoes (brandywine toms if available)
  • 1/4 c. chopped cilantro
  • 2 chopped shallots
  • 2 limes
  • salt and pepper

Directions
  1. Husk and clean corn if not done so already. Wish a sharp knife and flat surface cut out the kernels of corn (in a shaving motion against corn).
  2. slice tomatoes in half and squeeze out seeds and juice on the corn and dice the tomato.
  3. add cilantro and shallots, and squeeze the juice of the limes together with the almost finished salsa.
  4. add sal and pepper to taste
  5. serve with chips or on grilled chicken and steak.
