Roasted Red Pepper Bruschetta Recipe
Enjoy this dish at a potluck as a pita or Semolina bread bruschetta dip. Always a hit, even with the meat lovers! Best, and easiest to pre-prep the day prior and sneak into the oven right before demolishing!

Ingredients
  • 1 large can Roasted Red Peppers, diced very small (can add hot roasted red peppers)
  • 1/8 cup water from can, reserved
  • Garlic, chopped
  • Salt to taste
  • Italian Herbs
  • Crushed red pepper
  • Olive Oil

Directions
  1. Mix ingredients into an oven-safe bowl (I use Pyrex)
  2. Put into fridge overnight, to help constitute flavors
  3. Bake for 30 minutes at about 350 F
  4. Enjoy with Pita, Pita chips, homemade bread, semolina, or fresh veggies!

I think I'll roast some red bell peppers right now and then we can have this tonight w/ dinner. Thanks!


Let me know how it turns out! I think fresh herbs fresh from the plant would make it awesome, but I haven't had the chance to try it like that, yet. So far, it has worked pretty well with dried herbs.
