Soy Mayonnaise Recipe
They didn't have any at the health store so I made my own. This can be used in my "Eggless Salad Sandwich." I would suggest making it as you need it as it doesn't keep like regular mayo.

Ingredients
  • 1/2 cup of soy milk (this amount can change if you need more or less)
  • juice of a half lemon
  • 1 tbs cider vinegar
  • pinch of sea salt
  • 1/2 cup of canola or olive oil (must be equal to the amount of soy milk)

Directions
  1. Put the soy milk, lemon juice, salt and vinegar into a blender and blend for 2-3 minutes.
  2. While still blending slowly add the oil in a stream.
  3. Keep it blending for 5 minutes and the soynnaise (clever?) becomes creamy.

1/2 cup of soy milk. Let me just go and edit that....


Thank you for Posting this recipe, this is one of those items that is needed and easy to make.
I would add a teaspoon of nutritional yeast.
