This is yet another recipe I found for the zucchini laying around

Ingredients
  • 2 medium zucchini
  • 1 large onion, sliced
  • 2 tomatoes, sliced
  • salt and pepper
  • 2 TBSP butter
  • 2 cups grated yellow cheese (like cheddar)

Directions
  1. preheat oven to 350.
  2. Slice the zucchini diagonally.
  3. In a buttered 2 qt casserole, layer the zucchini, onion, and tomatoes.
  4. Add salt and pepper and dot with butter.
  5. Cover tightly with foil and bake for 45 - 60 minutes.
  6. Uncover, top with cheese, and return to oven for a few minutes.

I had a recipe similar to this lost it, a very good side dish. I use 1 cup of swiss and one cup cheddar works great. Thanks Jerry.
