Italian Berry Pie

- 1 9” pie crust, unbaked shopping list
- 1 cup light ricotta cheese shopping list
- 2 egg replacers, prepared shopping list
- 3 tbsp sugar shopping list
- 1 tsp vanilla extract shopping list
- 1 cup unsweetened frozen blueberries, thawed shopping list
- 1 cup raspberries, washed and picked over shopping list
How to make it
- Preheat oven to 350ºF.
- Place ricotta cheese in bowl of a food processor; process until smooth and creamy.
- Add egg replacers, sugar, and vanilla; process again until well combined.
- Spoon filling into pie crust, and bake about 45 minutes.
- Cool pie, arrange berries on top.
