Very Spicy Eggplant

- 1 pound eggplant peeled and diced shopping list
- 1 teaspoon minced garlic shopping list
- 1 tablespoon cornstarch mixed with 2 tablespoons water shopping list
- canola oil for deep-frying shopping list
- Sauce: shopping list
- 2 tablespoons oyster sauce shopping list
- 2 tablespoons soy sauce shopping list
- 2 tablespoons water shopping list
- 1 tablespoon white vinegar shopping list
- 1 tablespoon granulated sugar shopping list
- 1 teaspoon chili paste shopping list
- 1/2 teaspoon ground bean sauce shopping list
- 1/2 teaspoon sesame oil shopping list
How to make it
- Combine all sauce ingredients and mix well.
- Deep fry eggplant in preheated wok for 1 minute.
- Remove eggplant and rain on paper towels.
- Remove all but 1/2 teaspoon of oil from wok.
- On high heat stir fry garlic for 5 seconds then add sauce.
- Reduce heat and let sauce simmer 20 seconds.
- Add eggplant and simmer for another 10 seconds.
- Stir in cornstarch paste a little at a time until desired consistency then serve immediately.
