Greek Bean Salad Tried and True

- 2 cups dried fava beans shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 tablespoon minced garlic shopping list
- 1/4 cup chopped fresh mint shopping list
- 4 tablespoons minced red onion shopping list
- 1 tablespoon olive oil shopping list
How to make it
- Rinse beans then place in pot with water to cover by 2 inches.
- Bring to boil then partly cover and simmer for 2 hours.
- Let cool then stir in lemon juice, garlic, olive oil, mint and onion.
- Serve at room temperature or chill for one hour.
