How to make it

  • Beat butter at high speed of an electric mixer then gradually add sugar and cream until fluffy.
  • Beat in whole eggs and 2 of the egg whites.
  • Stir in flour and mix well.
  • Combine egg yolks, sugar, whipping cream and salt in the top of a double boiler or heavy saucepan.
  • Cook and stir until custard is thickened then set aside to cool a few minutes.
  • Generously grease muffin pan cups and coat with fine dry bread crumbs.
  • Line each cup with 1 tablespoon of the dough then spoon in 2 tablespoons of the custard and top with more dough.
  • Beat reserved egg white until just foamy and brush top of each then bake at 350 for 25 minutes.
