Ingredients
  • 1 kg beetroot
  • 1 to 2 cups of sugar (according to taste)
  • 1 litre of white vinegar
  • 1 teaspoon of allspice
  • 12 cloves
  • 12 peppercorns
  • 1 teaspoon salt

Directions
  1. Boil the beetroot in plenty of water until cooked through then peel, slice and pack into sterilised jars.
  2. Combine all the other ingredients in a large saucepan. Bring to the boil, then remove from the heat. Allow to stand (covered) for around 20 minutes to allow the vinegar to cool and the flavours to infuse.
  3. Strain the vinegar, then pour over the beetroot slices in the jar, making sure that they are well covered with the liquid.
  4. Seal with non corrosive lids.

What is beetroot?Just a beet?


I guess so...Only ever referred to them as beetroot but in all likelihood its exactly the same thing. Reddish-purple bulb vegetable?
