Sweet And Hot Pepper Jelly Recipe
An easy pepper jelly, perfect with cream cheese on crackers or served with roasted or broiled meats.

Ingredients
  • 1 cup red bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1/4 cup jalapeno pepper, finely chopped
  • 6 1/2 cups sugar
  • 1 1/2 cups white or cider vinegar
  • 6 ounces liquid pectin

Directions
  1. In large saucepan, combine peppers, sugar and vinegar.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Stir in pectin.
  4. Bring to a full rolling boil, stirring, and boil for exactly 2 minutes.
  5. Remove from heat and cool 5 minutes, skimming off foam.
  6. Ladle into clean jars, leaving 1/4 inch headspace.
  7. Wipe jars and lids clean and apply lids.
  8. Invert jars a few seconds and cool upright on a wire rack.
  9. Test for seal.
  10. Store in refrigerator for several weeks before opening.
