Here is a one-dish meal for a busy day. Lots of flavor. You can substitute pork chops for the ribs.

Ingredients
  • 2 1/2 lbs. meaty country-style pork ribs
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon garlic salt
  • 2 tablespoons butter, margarine or oil
  • 4 medium potatoes,pared,sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup each chopped onion and green bell pepper
  • 3/4 cup milk
  • 1 can (16oz..) cream-style corn
  • 1 fresh tomato, diced
  • 2 green onions, thinly sliced

Directions
  1. Preheat oven to 350.F
  2. Dust ribs with flour .Sprinkle with garlic salt.
  3. Brown in heated butter in heavy skillet.
  4. Layer potatoes in a lightly oiled 13 x 9 inch bakeing dish.Sprinkle with salt, black pepper, onion and green bell pepper.
  5. Pour milk over vegetables. Cover with the corn.
  6. Top with browned ribs, covering vegetables in a single layer.
  7. Cover and bake at 350.F for 30 minutes.
  8. Remove cover. Bake 30 minutes longer or until ribs are tender and potatoes are done.
  9. Before serving sprinkle with tomato and green onions.

Made this for dinner today. Everyone really liked it. I put a couple of pats of butter on the potatoes and I did bake it about 35 minutes longer. Will be making this again.
