How to make it

  • Heat oil in a large heavy skillet over med.-high heat
  • Add cherry peppers,onion and italianelle pepper.
  • Saute 2 min.
  • add chicken; saute 3 to 4 min.
  • add garlic and saute 1 min. longer.
  • Add tomatoes,reduce heat to medium and simmer a while.
  • Cook pasta according to package directions; drain
  • Divide pasta among 6 serving plates.
  • Spoon chicken mixture on top.
  • Sprinkle with Parmesan or Romano cheese.
  • Serves 6

    Thanks, looks yummy. Do have to watch the starches though as I am diabetic. Will try in small portions. My family will love it though they are great pasta eaters.

    The flavors sound delicious - I use Dreamfields pasta to keep the GI in check, but I'm sure this will be delicious with any pasta (though I have to say I don't know I'm eating anything other than regular pasta when I use Dreamfields). It's Fall and pasta time if here again!!! Thanks for a great new recipe to try...
