Basic Vinaigrette Recipe
Here's my basic vinaigrette recipe; I use this on all sorts of salads and veggies. It keeps well for about 3-4 days in the refrigerator, though the flavors will mellow in that time. Use the best ingredients you can find--it will make a difference!

Ingredients
  • 1 clove garlic, smashed
  • 1 tsp. strong dijon mustard
  • 1 tbs. white wine vinegar
  • salt and peppar
  • extra-virgin olive oil, 3-4 tbs.

Directions
  1. Mix together the mustard and vinegar with the clove of garlic in a bowl or a jar with a tight-fitting lid. Leave them to mingle about 10-15 minutes.
  2. If using a bowl, slowly add olive oil, whisking, until the consistency is how you like it. If using a jar, start with about 2-3 tbs. oil, place the lid on tightly, and shake like crazy till it's as thick as you like.
  3. Remove the clove. Season with salt and pepper. That's it!

Hi Debra, thanks for the comment! You could use any vinegar you like, really. Red wine vinegar is nice, as is an herb-flavoured vinegar.
