How to make it

  • Mix together the mustard and vinegar with the clove of garlic in a bowl or a jar with a tight-fitting lid. Leave them to mingle about 10-15 minutes.
  • If using a bowl, slowly add olive oil, whisking, until the consistency is how you like it. If using a jar, start with about 2-3 tbs. oil, place the lid on tightly, and shake like crazy till it's as thick as you like.
  • Remove the clove. Season with salt and pepper. That's it!

    Hi Debra, thanks for the comment! You could use any vinegar you like, really. Red wine vinegar is nice, as is an herb-flavoured vinegar.
