Green Chile Chicken Queso Soup Recipe

Ingredients

1/3 cup butter

1/2 onion, chopped

1 cup chicken, cut up

2 cloves garlic, minced

1/3 cup flour

2 cups half and half or light cream

2 cups chicken broth

1/2 teaspoon salt

1/2 teaspoon pepper

1 cup chopped green chile

2 cups sharp cheddar cheese, grated

1 cup tomatoes, cut up

Tortilla chips

Directions

Melt butter in a saucepan and saute chicken, onion and garlic until tender.

Combine flour and half and half or cream and stir until smooth. Gradually add to chicken.

Add chicken broth, salt and pepper and stir until thickened.

Add grated cheddar cheese and stir over low heat until cheese is melted.

Add green chile and tomatoes and simmer on low for 15 minutes stirring often.

Serve with tortilla chips.
