Ingredients
  • 2 pounds catfish fillets cut in serving size pieces
  • 1 tablespoon packed dark brown sugar
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup cider vinegar
  • 1/4 cup tomato ketchup
  • 1/4 cup canola oil
  • Cooking spray

Directions
  1. Arrange fillets in a shallow nonmetallic baking dish.
  2. In a bowl mix next eight ingredients with a whisk.
  3. Add oil and whisk into an emulsion.
  4. Spread sauce over fillets and let stand refrigerate for 1 hour.
  5. Turn fillets then spread sauce and let stand refrigerated for another 30 minutes.
  6. Liberally spray grill with cooking spray.
  7. Arrange fillets on grill and brush generously with sauce.
  8. Cook 5” from coals for 6 minutes.
  9. Baste with more sauce then turn and cook for an additional six minutes.
