Overnight Chicken Light Recipe
This is a lightened chicken casserole that's made the night before. Letting it soak up the soup makes it delicious.

Ingredients
  • 4 hard-cooked eggs
  • 2 cups dry elbow macaroni
  • 1-1/2 cups light cheese, such as light Velveeta®, cubed
  • 2 cans low fat cream of chicken soup
  • 2 cups diced, cooked chicken breast
  • 2 cups low-fat milk
  • 3/4 cup diced onion

Directions
  1. Remove and discard two of the egg yolk from the hard-cooked eggs.
  2. Chop the remaining egg whites and yolks.
  3. In a large bowl, combine all the remaining ingredients and mix well.
  4. Cover with plastic wrap and refrigerate overnight.
  5. The next day, preheat the oven to 350°.
  6. Coat a 2-1/2 quart casserole dish with non-stick cooking spray.
  7. Remove bowl from the refrigerator.
  8. Stir ingredients and pour into prepared dish.
  9. Bake, uncovered, for 1-1/2 hours.
