Overnight Chicken Light

- 4 hard-cooked eggs shopping list
- 2 cups dry elbow macaroni shopping list
- 1-1/2 cups light cheese, such as light Velveeta®, cubed shopping list
- 2 cans low fat cream of chicken soup shopping list
- 2 cups diced, cooked chicken breast shopping list
- 2 cups low-fat milk shopping list
- 3/4 cup diced onion shopping list
How to make it
- Remove and discard two of the egg yolk from the hard-cooked eggs.
- Chop the remaining egg whites and yolks.
- In a large bowl, combine all the remaining ingredients and mix well.
- Cover with plastic wrap and refrigerate overnight.
- The next day, preheat the oven to 350°.
- Coat a 2-1/2 quart casserole dish with non-stick cooking spray.
- Remove bowl from the refrigerator.
- Stir ingredients and pour into prepared dish.
- Bake, uncovered, for 1-1/2 hours.
