Festive Cake Recipe
A very good holiday cake. Serve with your favorite cream cheese frosting.

Ingredients
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped nuts
  • 3 eggs
  • 1-1/2 cups oil
  • 1 teaspoon vanilla extract, may also substitute almond extract
  • 2 cups chopped, firm, ripe bananas
  • 1-8 ounce can crushed pineapple
  • Cream cheese frosting

Directions
  1. In a bowl, mix then sift flour, sugar, baking soda, salt and cinnamon.
  2. Stir in nuts.
  3. In another bowl, beat eggs slightly.
  4. Add oil, extract, bananas,and undrained pineapples.
  5. Add dry ingredients and mix thoroughtly, BUT DO NOT BEAT!
  6. Spoon into a well-oiled 10-inch tube pan.
  7. Bake at 325° for 1 hour and 20-25 mnutes.
  8. Remove from oven.
  9. Let stand 10-15 minutes.
  10. Invert cake on wire rack and remove pan.
  11. Cool thoroughly before frosting.
  12. Use cream cheese frosting and frost cake.
