Stuffed Baked Salmon

- 2 kg (5lb) fresh salmon shopping list
- 8 slices bacon shopping list
- 1 onion, diced shopping list
- 1 celery stalk, sliced shopping list
- 2 carrots, julienned shopping list
- 2 c saltine crackers, crushed shopping list
- 1 c crab meat, chopped shopping list
- 1 tsp paprika shopping list
- 1/2 tsp each salt and pepper shopping list
- 1/2 c water shopping list
How to make it
- Fry bacon until crisp.
- Add onion, celery and carrots. Saute until tender. Drain fat and then let cool.
- Mix the crackers with the crab and the seasonings. Add the bacon mixture.
- Stuff this mixture into the cavity of the salmon and close with string or toothpicks.
- Pour water into greased baking pan; add salmon and bake for about 45 mnutes.
- Serve with mashed potatoes and cream cheese.
