Stuffed Baked Salmon Recipe
Salmon is a favourite in our home and this recipe is great on a cold winter night! Serve with cream cheese potatoes.

Ingredients
  • 2 kg (5lb) fresh salmon
  • 8 slices bacon
  • 1 onion, diced
  • 1 celery stalk, sliced
  • 2 carrots, julienned
  • 2 c saltine crackers, crushed
  • 1 c crab meat, chopped
  • 1 tsp paprika
  • 1/2 tsp each salt and pepper
  • 1/2 c water

Directions
  1. Fry bacon until crisp.
  2. Add onion, celery and carrots. Saute until tender. Drain fat and then let cool.
  3. Mix the crackers with the crab and the seasonings. Add the bacon mixture.
  4. Stuff this mixture into the cavity of the salmon and close with string or toothpicks.
  5. Pour water into greased baking pan; add salmon and bake for about 45 mnutes.
  6. Serve with mashed potatoes and cream cheese.
