Shrimp Casserole Recipe
I have this recipe from an old Pillsbury Holiday cookbook. (Give credit where credit is due!) I make this as part of a pre-Christmas holiday party I host annually.

Ingredients
  • 8 ounces fresh mushrooms, sliced
  • 1 tablespoon butter
  • 1 pound medium cooked shrimp, peeled and deveined
  • 6 stalks celery, diagonally sliced
  • 3/4 cup sweet onion, thinly sliced
  • 1/2 cup green bell pepper, chopped (I have also used half red pepper and half green pepper)
  • 4 hard cooked eggs, chopped
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 1 1/2 cups mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 cup Panko breadcrumbs
  • 1 tablespoon butter, melted
  • 1/2 cup slivered or sliced almonds

Directions
  1. Saute mushrooms in 1 tablespoon butter until softened.
  2. Drain and set aside.
  3. In large bowl, combine mushrooms, shrimp, celery, onion, green pepper, eggs, water chestnuts, mayonnaise, Worcestershire sauce and salt.
  4. Transfer to greased 13x9 inch baking pan.
  5. In small bowl, combine Panko breadcrumbs and melted butter.
  6. Sprinkle over.
  7. Sprinkle with almonds.
  8. Bake at 350 degrees for 45 minutes or until heated through.
