Choco-Chup Miffins Recipe
When my neice was about 3, she said, "JJ, can you make me choco-chup miffins?" This is the recipe I used and even though she's not 3 anymore, we still call them miffins!

Ingredients
  • 3 ounces unsweetened chocolate
  • 6 tablespoons butter
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 tablespoon white vinegar + enough milk to make 1/4 cup
  • 2 very ripe bananas
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips

Directions
  1. Heat butter and unsweetened chocolate in a double boiler until chocolate melts.
  2. Stir to blend and set aside to cool slightly.
  3. Mix vinegar and milk. Set aside.
  4. In a bowl, mix flour and baking soda. Set aside.
  5. In a large bowl, mash bananas.
  6. Add sugar and beat until wll mixed.
  7. Add vanilla and eggs and beat again.
  8. Add chocolate when it's cooled.
  9. Alternately add flour and milk, beating after each addition.
  10. When all is mixed, fold in chocolate chips.
  11. Spoon mixture into 12 paper-lined muffin cups.
  12. Bake at 350° for 25 minutes.
  13. Cool in pan for 5 minutes.
  14. Transfer to a wire rack and cool completely.
  15. Makes 1 dozen large miffins.
