An interesting twist on traditional sweet and sour beets, with some serious flavour kick. Use a good clear rum for this, not a spiced one.

All I know is that a little rum has got to help beets taste better. My husband has decided to plant 2 rows of them and I have no idea how to prepare them or what to serve them with. Any suggestions would be greatly appreciated:)

In case you were wondering, the beets weren't bad at all. I do think that they might need just a smidge less apple cider vinigerand maybe 1/2 ounce more rum. I may do those again, but it would be just me eating them. I guess my husband doesn't like his beets hot. do you have any cold beet recipes?
