How to make it

  • Boil and prep the potatoes as you would if you are making mashed potatoes.
  • Process the garlic and lemon juice a bit, so the garlic is smooth
  • Mash the potatoes really good, combine with the rest of the ingredients. Don't blend with a blender as it makes the potatoes "glutinous" in appearance, and takes away from the texture. You can mix via sporadic food processing, if mashing is too extensive/difficult.
  • Use as a dip for fried finger foods. This is a wonderful mediterranean dip that's often overlooked. It tastes a lot better than expected!
  • Serve hot or cold, topped with a bit of olive oil and some paprika and parsley, if desired (looks more festive) ^_^

    It is delicious!! I'd say post away. Many of my recipes are "to taste" rather than with measurements (measurements are necessary, in my mind, only to those recipes that require baking such as cakes, doughs, rolls, etc)...
    I'm also open to trying new recipes, and whenever I make this again, I would be very likely to try it spicy (with freshly crushed red pepper)... ^_^
