How to make it

  • Sprinkle 1 side of tomato slices wvenly with salt and pepper. Dredge seasoned sides in cornmeal.
  • Heat oil in a large skillet over medium-high heat. Add tomato slices, coated sides down; cook 6 minutes, turning after 3 minutes. Serve immediately.
  • Serving size: 2 slices; 123 calories; 29% from fat.

    Why didn't I think of that? Half the calories, but all the good fried taste...brilliant! I will definitely try this method next time we have these. Thanks!
