  • CAKE
  • 1 1/2 cups flour
  • 1 cup oil
  • 2 teaspoons cinnamon
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 cups grated raw carrots
  • 1 1/2 cup sugar
  • 1/2 cup chopped nuts
  • FROSTING
  • 2 pkgs. cream cheese (3 oz. each)
  • 1/2 cup butter or margarine
  • 4 cups powdered sugar
  • 1 teaspoon almond or vanilla extract

Directions
  1. CAKE
  2. Mix together flour, cinnamon, baking soda and salt. Set aside. Combine sugar, oil, eggs and vanilla in large mixing bowl.
  3. Blend at low speed for 30 seconds. Add dry ingredients. Mix at medium speed for 3 minutes.
  4. Fold in carrots and nuts.
  5. Pour into an 11 3/4 x 7 1/2 x 3/4 inch microwave dish. Tap bottom gently.
  6. Cover with paper towel.
  7. Microwave on high for 12 to 15 minutes or until tester comes out clean. Turn halfway through baking.
  8. Immediately remove paper towel. Allow to stand on a solid surface until cool.
  9. When cool, ice with Quick Cream Cheese Frosting.
  10. QUICK CREAM CHEESE FROSTING
  11. Place cream cheese and butter in a 2 quart casserole.
  12. Microwave on low (30%) for 1 1/2 minutes or until softened.
  13. Stir in sugar and extract until well blended.
  14. Beat until spreading consistency.
