Seths Special Carrot Cake with Cream Cheese Frosting

- cake shopping list
- 1 1/2 cups flour shopping list
- 1 cup oil shopping list
- 2 teaspoons cinnamon shopping list
- 3 eggs shopping list
- 1 teaspoon baking soda shopping list
- 1 1/2 teaspoon vanilla shopping list
- 1/2 teaspoon salt shopping list
- 2 cups grated raw carrots shopping list
- 1 1/2 cup sugar shopping list
- 1/2 cup chopped nuts shopping list
- frosting shopping list
- 2 pkgs. cream cheese (3 oz. each) shopping list
- 1/2 cup butter or margarine shopping list
- 4 cups powdered sugar shopping list
- 1 teaspoon almond or vanilla extract shopping list
How to make it
- CAKE
- Mix together flour, cinnamon, baking soda and salt. Set aside. Combine sugar, oil, eggs and vanilla in large mixing bowl.
- Blend at low speed for 30 seconds. Add dry ingredients. Mix at medium speed for 3 minutes.
- Fold in carrots and nuts.
- Pour into an 11 3/4 x 7 1/2 x 3/4 inch microwave dish. Tap bottom gently.
- Cover with paper towel.
- Microwave on high for 12 to 15 minutes or until tester comes out clean. Turn halfway through baking.
- Immediately remove paper towel. Allow to stand on a solid surface until cool.
- When cool, ice with Quick Cream Cheese Frosting.
- QUICK CREAM CHEESE FROSTING
- Place cream cheese and butter in a 2 quart casserole.
- Microwave on low (30%) for 1 1/2 minutes or until softened.
- Stir in sugar and extract until well blended.
- Beat until spreading consistency.
