How to make it

  • CAKE
  • Mix together flour, cinnamon, baking soda and salt. Set aside. Combine sugar, oil, eggs and vanilla in large mixing bowl.
  • Blend at low speed for 30 seconds. Add dry ingredients. Mix at medium speed for 3 minutes.
  • Fold in carrots and nuts.
  • Pour into an 11 3/4 x 7 1/2 x 3/4 inch microwave dish. Tap bottom gently.
  • Cover with paper towel.
  • Microwave on high for 12 to 15 minutes or until tester comes out clean. Turn halfway through baking.
  • Immediately remove paper towel. Allow to stand on a solid surface until cool.
  • When cool, ice with Quick Cream Cheese Frosting.
  • Place cream cheese and butter in a 2 quart casserole.
  • Microwave on low (30%) for 1 1/2 minutes or until softened.
  • Stir in sugar and extract until well blended.
  • Beat until spreading consistency.
