  • DIRECTIONS:
  • 1. In a large bowl, combine the beef, meat tenderizer, cayenne pepper,
  • ground black pepper, garlic powder, brown sugar, mustard powder and
  • peppercorns and
  • mix well. Pour the liquid smoke over the mixture, but do not mix. Cover and
  • place in the refrigerator for at least 24 hours.
  • 2. Preheat oven to 150 degrees F (65 degrees C).
  • 3. Remove the beef mixture from refrigerator and mix well. Roll into 1 1/2x9
  • inch logs and place in a 9x13 inch baking dish.
  • 4. Bake at 150 degrees F (65 degrees C) for 4 hours. Remove from oven and
  • let cool.

    i will definitely give this a go, in the near future, i love summer sausage so much, and you are right it costs a pretty penny at the store! so i buy it only for get togethers or holidays. but if i can get the hang of making it myself! oh yeah that would be sweet! thanks so much for sharing.

    I've made my mom's breakfast sausage many a time, but this is daunting. And worth doing. We love summer sausage and learning how to make it can't be a bad thing. I learned to do the jerky, why not the summer sausage? Can you tell me the size of the log you roll, I'm not getting the size you want it to be?
