How to make it

  • Wash carrrots and put in a medium sized microwave safe bowl and add 1/4 cup of water. Cover with microwave safe plastic wrap, keeping on side vented. Microwave on high for 7 to 10 minutes.
  • Cook until the carrots are just tender. Drain well.
  • Toast the almonds in a small sauce pan until toasted, stir often, don't burn. Add butter, pinch of salt and amaretto. Cook over low heat two minutes. Pour over hot drained carrots and stir. Sprinkle with parsley.
