Ingredients
  • 1 large can tomato sauce
  • 3 cups peeled and sliced potatoes
  • 2 cups sliced zucchini
  • 1 small green pepper sliced thin
  • 1 small white onion sliced with rings separated
  • 3/4 cups bread crumbs
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup Romano cheese
  • 3 slices bacon
  • 3 tablespoons vegetable oil

Directions
  1. Oil sides and bottom of casserole dish with about 3 tablespoons vegetable oil.
  2. Layer potatoes on bottom of casserole dish then sprinkle with 1/3 of bread crumbs and cheese.
  3. Repeat layers of zucchini, bread crumbs, cheese, onions and sliced peppers.
  4. Pour tomato sauce over layers then add water, salt and pepper.
  5. Add two slices of bacon to top.
  6. Bake covered at 350 for 30 minutes.
  7. Stir occasionally and add water if needed.
