Coconut Marshamallow Icing

- 1 can coconut or 1/4 lb. shredded coconut shopping list
- 1 cup sugar shopping list
- 3 tbsp water shopping list
- 1 egg white, unbeaten shopping list
- 12 lg marshmallows shopping list
How to make it
- Put the sugar, water and egg white in a double boiler and beat with an egg beater for 7 minutes after the water is boiling. Have the marsmallows chopped in a bowl. Pour the mixture over them and beat until thick. Stir in half the coconut, spread quickly and sprinkle the remaining coconut on top.

Easy and delicious. I can't make a decent frosting and this worked beautifully. Thanks for the post. It was great on chocolate cake, like eating a giant fluffy Mounds bar....decadent.
