Ingredients
  • 2 tsp olive oil
  • 1 lb sweet Italian turkey sausages, sliced in 1 inch wide pieces (freeze 20 min. to make slicing easier)
  • 1 red bell pepper, cut in strips
  • 1 yellow bell pepper, cut in strips
  • 1 Tbs minced garlic
  • 4 cups water
  • 1 tsp dried basil
  • 2 chicken bouillon cubes (or 2 tsp chicken base, which I prefer)
  • 8 oz thin spaghetti, broken in thirds
  • 2 1/2 cups frozen cut spinach leaves
  • parmesan cheese (to garnish)

Directions
  1. Heat oil in large skillet over med. high heat.
  2. Add sausage, peppers, and garlic, and saute about 4 minutes, until peppers are tender, but still crisp.
  3. Add water, basil, and bouillon.
  4. Bring to boil.
  5. Stir spaghetti to liquid.
  6. Boil gently, uncovered, for 5 minutes.
  7. Stir in spinach, cover and reduce heat, simmer 4 minutes.
  8. Uncover, increase heat, boil gently for 6-8 min.
  9. ,stirring often until pasta is al dente, and liquid is nearly absorbed, but still saucy.
  10. Garnish with parmesan cheese.
