Herbed And Spicy Steak Tartare Recipe
People either love this or get "grossed out". Me, I love it. Use the freshest and best quality ground beef you can find! Best to keep on a platter of ice while serving.

Ingredients
  • 4 teaspoons Dijon mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons heavy cream
  • 2 tablespoons olive oil
  • 1/3 teaspoon ground cumin
  • 1/3 teaspoon cayenne pepper
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 6 tablespoons fresh parsley, minced
  • 1 teaspoon dried basil
  • 2 tablespoons green onion, minced
  • 1 1/2 pounds good quality fresh lean ground beef (ground sirloin is the best)
  • thinly sliced sweet onion
  • rye or pumpernickle cocktail breads

Directions
  1. Whisk together mustard, lemon juice, heavy cream, olive oil, cumin, cayenne, salt and pepper.
  2. Add parsley, basil and green onion.
  3. Add ground beef and mix using two forks, aerating rather than squashing or turning beef.
  4. Mound on serving platter and surround with sliced sweet onion and breads.

And then there are those who will list all the health risks (who are probably also grossed out). I too love(d) it, though I don't remember having a tartare with this much spice. Guaranteed I'll like this :).
