Herbed and Spicy Steak Tartare

- 4 teaspoons Dijon mustard shopping list
- 2 tablespoons lemon juice shopping list
- 2 tablespoons heavy cream shopping list
- 2 tablespoons olive oil shopping list
- 1/3 teaspoon ground cumin shopping list
- 1/3 teaspoon cayenne pepper shopping list
- 3/4 teaspoon salt shopping list
- 1/2 teaspoon ground black pepper shopping list
- 6 tablespoons fresh parsley, minced shopping list
- 1 teaspoon dried basil shopping list
- 2 tablespoons green onion, minced shopping list
- 1 1/2 pounds good quality fresh lean ground beef (ground sirloin is the best) shopping list
- thinly sliced sweet onion shopping list
- rye or pumpernickle cocktail breads shopping list
How to make it
- Whisk together mustard, lemon juice, heavy cream, olive oil, cumin, cayenne, salt and pepper.
- Add parsley, basil and green onion.
- Add ground beef and mix using two forks, aerating rather than squashing or turning beef.
- Mound on serving platter and surround with sliced sweet onion and breads.
