Mini Cherry Cheesecakes

- 1 cup vanilla wafer crumbs shopping list
- 3 tbsp. butter shopping list
- 8 oz. cream cheese, softened shopping list
- 1 1/2 tsp. vanilla shopping list
- 2 tsp. lemon juice shopping list
- 1/3 cup sugar shopping list
- 1 egg shopping list
- 12 paper-Lined Muffin Cups shopping list
- Topping: shopping list
- 1 lb. Pitted Tart Red cherries shopping list
- 1/2 cup sugar shopping list
- 2 tbsp. cornstarch shopping list
- red food coloring (if desired) shopping list
How to make it
- In a bowl, combine vanilla wafer crumbs and butter.
- Press gently into the bottom of 12 paper-lined muffin cups.
- In a mixing bowl, combine cream cheese, vanilla, lemon juice, sugar and egg.
- Beat until smooth; spoon into crusts.
- Bake at 375 degrees for 12-15 minutes, or until set.
- Cool completely.
- Drain cherries, reserving 1/2 cup juice in a saucepan; disregard remaining juice.
- To juice add cherries, sugar, cornstarch, and food coloring (if desired).
- Bring to boil, stirring occasionally; boil for 1 minute.
- Cool; spoon over cheesecakes.
- Enjoy!!!
