Basic Chinese Stock Canton China Recipe
A basic Chinese stock used in many other dishes. This recipe is from the Yar Gay Restaurant in Canton, China.

Ingredients
  • 3 pounds chicken parts, bone in
  • 2 pounds pork neck bones or ribs
  • 6 whole scallions, each tied in a knot
  • 2 garlic cloves, minced
  • 4 tablespoons soy sauce
  • 10 quarts water

Directions
  1. This recipe is adapted from Yar Gay Restaurant in Canton, China.
  2. Place the ingredients in a large soup pot. Cover with water and bring to a boil.
  3. Reduce heat and simmer for 90 minutes. Skim the surface of any solid deposits that rise.
  4. As the liquid reduces, maintain the liquid at about 6 quarts.
  5. Since the stock is used in other dishes, salt is not add during preparation but at the time the stock is used.
  6. When finished, remove the chicken and pork bones and strain the stock into pint or quart jars,
  7. Can, freeze or refrigerate as you desire.
