Polpettone Di Zuchine Recipe
Vegetarian (cheese) loaf dinner. Or more simply "meatloaf without meat." A major dish for the zucchini lover.

Ingredients
  • 2 lb zucchini
  • 1/2 onion
  • 1 clove garlic
  • 8 Tbsp extra-virgin olive oil
  • 1 bunch parsley
  • 3 medium potatoes
  • 4 eggs
  • 4 Tbsp grated Parmigiano-Reggiano
  • Mutmeg
  • Marjoram
  • Salt & pepper
  • Breadcrumbs

Directions
  1. Preheat oven to 375.
  2. Cut the zucchini into thin rounds.
  3. Finely dice the onion and garlic.
  4. Heat the oil in a deep fryin gpan and lightly brown the onion and garlic.
  5. Add the zucchini, mix well, cover the pan and cook over low heat for about 15 minutes.
  6. Chop the parsley and sprinkle over the zucchini.
  7. Mix well and remove the pan from the heat.
  8. Pour the zucchini into a large bowl.
  9. Boil, drain, peel, and puree the potatoes, then add to the zucchini.
  10. Add the eggs, cheese, and spices, and blend well.
  11. Grease a baking dish with olive oil and cover with breadcrumbs.
  12. Pour the zucchini-potato mix into the dish and baste with oil.
  13. Bake for 40 minutes.
