Creamy Shrimp Curry Recipe

Ingredients
  • 1 lb. fresh, shelled shrimp cut into pieces
  • 1 small onion chopped fine
  • 1/2 cup unsalted butter
  • 1/3 cup plain flour
  • 2 tbps Indian curry (or more if you prefer)
  • 1/2 tsp kosher salt
  • 1 reg. can chicken broth or homemade
  • 1-1/2 cup whole milk
  • 1-1/2 tsp sugar
  • 1 tsp ground ginger
  • 1 tsp lemon juice

Directions
  1. Saute onion in butter until tender
  2. Add flour and curry stirring until smooth. Cook for at least a minute or two
  3. Gradually add milk and chicken broth, stirring until mixture thickens.
  4. Stir in sugar, salt, ginger and lemon juice cooking to incorporate flavors.
  5. Add shrimp and cook until shrimp turns pink
  6. I always taste to make sure I have enough of the fantastic Indian curry flavor.
  7. Serve over Jasmine rice
