Ingredients

How to make it

  • Cut the chicken breasts into 8 pieces and then each piece into thirds for 24 pieces of chicken total
  • cut each banana length wise into quarters, then each quarter into thrids for 24 pieces total
  • beat eggs and milk in medium sized bowl until well blended
  • brush one side of each piece of bread with egg mix
  • place one piece of chicken and one piece of banana on each piece of egged bread
  • place flour in one bowl bread crumbs in another
  • coat each chicken banana square lightly with flour then , dip in egg mix ,then the bread crumbs
  • heat oil in wok or large skillet over high heat to 375 degrees
  • cook 4 to 6 squares at on time unitl golden brown 2 to 3 minutes
  • drain on paper towels

    thinking about making these as an appetizer at a jamaican themed party...but, like erisgrrrl, i'm curious as to how do they stay together? do you pinch all the way around the bread? also, can dry bread crumbs be used instead of those made from slices of bread? someone please advise. has anyone out there made them yet?? how are they?

    I'm curious how these stay together during cooking. Maybe I'm just not experienced enough at wokking?! Do you wrap the bread around the filling?
