Dairyfree Eggfree Pumpkin Pie Recipe
An easy and tasty pumpkin pie that is safe for everyone in my family (even those with allergies to foods that are typically found in pumpkin pie recipes - milk and eggs).

Ingredients
  • 1 envelope unflavored gelatin
  • 1/3 cup water
  • 2/3 cup dairyfree milk substitute (your choice, we use rice milk)
  • 2 cups (1 can) pumpkin
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt

Directions
  1. Let the gelatin sit in the water for a minute before dissolving it on low heat, and then just throw the rest into the pot, mix it together, and pour into the 9" prebaked or graham cracker crust. Refrigerate for a couple of hours.

What kind of gelatin do you use? I have not found a vegan one as of yet. Thanks


I just use the regular Knox gelatin - we're not vegan but avoid dairy and egg because of allergies in the family. I just saw a recipe on Allrecipes for vegan gelatin - it uses agar agar and cornstarch - so you could probably combine this recipe and that one to come up with an actual vegan version. If you want some help with it, let me know and I will work on it :)
