Ingredients
  • 5 teaspoons soy sauce
  • 5 teaspoons sherry
  • 3 and1/2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 3 boneless skinless chicken breast halves cut into bit sized pieces
  • 1 tablespoon red wine vinegar
  • 2 tablespoons chicken broth or water
  • 1 and1/2 teaspoons sugar
  • 3 tablespoons oil
  • 1/2 cup salted peanuts
  • 6 small dried hot chili peppers sliced
  • 1 and1/2 teaspoons minced fresh ginger
  • 2 green onions cut into 1 and 1/2 inch pieces

Directions
  1. combine 2 teaspoons soy sauce, 2 teaspoons sherry, 2 teaspoons cornstarch and the salt in a large bowl mixing well
  2. add the chicken stir to coat well
  3. let stand for 30 minutes
  4. combine the remaining soy sauce,sherry, vinegar, chicken broth, sugar and the remaining cornstarch in a small bowl mixing well
  5. set aside
  6. heat 1 table spoon oil in wok or large skillet ove medium heat
  7. add peanuts and cook until golden
  8. remove from pan and set aside
  9. heat reamining oil over medium heat
  10. add chili peppers and stir fry 1 minute
  11. increase heat to high
  12. add chicken mixture
  13. stir fry 2 minutes
  14. add ginger and stir fry another 2 minutes until chicken is cooked through
  15. add onions and peanuts
  16. stir cornstarch mixture and add to wok
  17. cook stirring constantly until the sauce boils and thickens
  18. serve while still hot
