Kung Pao Chicken

- 5 teaspoons soy sauce shopping list
- 5 teaspoons sherry shopping list
- 3 and1/2 teaspoons cornstarch shopping list
- 1/4 teaspoon salt shopping list
- 3 boneless skinless chicken breast halves cut into bit sized pieces shopping list
- 1 tablespoon red wine vinegar shopping list
- 2 tablespoons chicken broth or water shopping list
- 1 and1/2 teaspoons sugar shopping list
- 3 tablespoons oil shopping list
- 1/2 cup salted peanuts shopping list
- 6 small dried hot chili peppers sliced shopping list
- 1 and1/2 teaspoons minced fresh ginger shopping list
- 2 green onions cut into 1 and 1/2 inch pieces shopping list
How to make it
- combine 2 teaspoons soy sauce, 2 teaspoons sherry, 2 teaspoons cornstarch and the salt in a large bowl mixing well
- add the chicken stir to coat well
- let stand for 30 minutes
- combine the remaining soy sauce,sherry, vinegar, chicken broth, sugar and the remaining cornstarch in a small bowl mixing well
- set aside
- heat 1 table spoon oil in wok or large skillet ove medium heat
- add peanuts and cook until golden
- remove from pan and set aside
- heat reamining oil over medium heat
- add chili peppers and stir fry 1 minute
- increase heat to high
- add chicken mixture
- stir fry 2 minutes
- add ginger and stir fry another 2 minutes until chicken is cooked through
- add onions and peanuts
- stir cornstarch mixture and add to wok
- cook stirring constantly until the sauce boils and thickens
- serve while still hot
