Lemon Chicken With Thyme Recipe
Pan-cooked chicken simmered in gravy made with lemon and thyme. Great served over rice.

Ingredients
  • boneless, skinless chicken breasts tenderloins
  • 2 T margarine
  • 2 T olive oil
  • onion powder
  • lemon juice
  • thyme
  • salt
  • pepper
  • flour
  • 2-3 cans chicken broth
  • rice(optional)

Directions
  1. Mix flour with salt and pepper.
  2. Coat chicken in flour, and reserve excess flour.
  3. Brown chicken in olive oil, cooking both sides.
  4. Remove cooked chicken and lower heat setting to about medium.
  5. Add margarine and dash of onion powder to the same pan you cooked the chicken in.
  6. Quickly add chicken broth to pan.
  7. Stirring constantly, gradually mix in enough reserved flour to get a gravy-like consistency(sifting the flour into the pan keeps it from getting lumpy)
  8. Add lemon juice and thyme to taste.
  9. Place chicken back in pan with gravy and turn heat to low.
  10. Allow to simmer until your rice is cooked or for about 15 minutes.
  11. Serve over rice or however you like.
