Chocolate Mint Tart

- For tart shell: shopping list
- 2 c flour plus more for dusting shopping list
- 4 tbsp icing sugar shopping list
- 1/4 tsp salt shopping list
- 3/4 c cold butter shopping list
- 3-4 tbsp ice water shopping list
- 1 egg, separated shopping list
- For filling: shopping list
- 1 c heavy or whipping cream shopping list
- 1/2 c milk shopping list
- 1 3/4 c mint chocolate chips shopping list
- 3 tbsp sugar shopping list
- 1/4 tsp salt shopping list
- 2 eggs, room temperature shopping list
How to make it
- Make the pastry by combining the flour, icing sugar, and salt in a large bowl.
- Cut in the butter with a pastry knife until it resembles small crumbs.
- In a small bowl combine the water and the egg yolk then add to the flour mixture--work into a dough.
- Form the dough into a disc then refrigerate for about 30 minutes.
- Roll out the pastry into a 14 inch circle about 1/4 inch thick.
- Lay pastry into an 11 inch round tart pan with a removeable bottom. Trim excess edges then line with foil and fill with pie weights.
- Bake at 350 degrees for about 25 minutes then remove from oven and brush with egg white.
- Return to oven and bake for another 10 minutes or until just turning light golden. Remove from oven and set aside.
- For filling, in a medium saucepan heat the cream and milk just to a simmer then remove from the heat.
- Add the mint chocolate chips and stir until melted and smooth.
- Add the sugar and salt then stir to combine thoroughly.
- Beat the eggs in another small bowl then add to the chocolate mixture. Stir to combine.
- Pour the filling into the tart shell and bake at 325 degrees for 20 minutes or until the filling is set.
- Cool. enjoy!
