How to make it

  • Make the pastry by combining the flour, icing sugar, and salt in a large bowl.
  • Cut in the butter with a pastry knife until it resembles small crumbs.
  • In a small bowl combine the water and the egg yolk then add to the flour mixture--work into a dough.
  • Form the dough into a disc then refrigerate for about 30 minutes.
  • Roll out the pastry into a 14 inch circle about 1/4 inch thick.
  • Lay pastry into an 11 inch round tart pan with a removeable bottom. Trim excess edges then line with foil and fill with pie weights.
  • Bake at 350 degrees for about 25 minutes then remove from oven and brush with egg white.
  • Return to oven and bake for another 10 minutes or until just turning light golden. Remove from oven and set aside.
  • For filling, in a medium saucepan heat the cream and milk just to a simmer then remove from the heat.
  • Add the mint chocolate chips and stir until melted and smooth.
  • Add the sugar and salt then stir to combine thoroughly.
  • Beat the eggs in another small bowl then add to the chocolate mixture. Stir to combine.
  • Pour the filling into the tart shell and bake at 325 degrees for 20 minutes or until the filling is set.
  • Cool. enjoy!
