Tuna Fritatta

- 1 cup thinly sliced zucchini shopping list
- 1/2 cup thinly sliced onion shopping list
- 2 tbls vegetable oil shopping list
- 5 extra-large eggs shopping list
- 1/4 cup low-fat milk shopping list
- 1 can (3 1/4 ounces) StarKist tuna, drained and flaked shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/2 cup shredded Swiss or monterey jack cheese shopping list
How to make it
- In a large ovenproof skillet saute zucchini and onion in oil for 3 minutes, or until vegetables are limp.
- In a medium bowl beat eggs lightly with milk.
- Stir in tuna, salt and pepper.
- Preheat broiler.
- Pour egg mixture over sauteed vegetables; reduce heat to medium.
- Cook, convered, for 5 to 8 minutes, or until set.
- Uncover frittata; sprinkle cheese over top.
- Place frittata under broiler until cheese is melted.
- cut into quarters to serve.
