Coconut Shrimp

- 65 medium shrimp, peeled and deveined shopping list
- 2 cups flour shopping list
- 1/2 quart fry batter mix (flour, cornmeal, salt, spices) shopping list
- 6 oz. coconut milk shopping list
- 1/2 lb. coconut flakes (I used sweetened) shopping list
- oil for frying shopping list
- honey mustard Horseradish Sauce: shopping list
- 1 cup mayonnaise shopping list
- 1-1/2 cups honey shopping list
- 1/2 cup Dijon mustard shopping list
- 1/2 cup horseradish shopping list
How to make it
- Cocount Shrimp
- Dredge shrimp in flour to coat.
- Mix fry batter and coconut milk together, adding water, if necessary to create cake batter consistency.
- Dip shrimp in batter mixture.
- Roll shrimp in coconut flakes to cover.
- Deep fry to a golden brown.
- Serve with Honey Musterd Horseradish Sauce:
- For the sauce, simply mix all ingredients well.
