Polish Sausage And Bean Soup Recipe
This is a hearty main dish soup for a cold fall or winter day. If you purchase mixed dried beans in bulk - not pre-packaged bean soup mix - you save a lot of money! Serve with sliced Italian bread.

Ingredients
  • 12 ounces dry mixed beans
  • 1-1/2 pounds turkey sausage links
  • 1 (29 ounce) can diced tomatoes
  • 2 (14 ounce) cans chicken broth
  • Note: I also like to add vegetable stock
  • 1 cup white wine
  • 1 red bell pepper, chopped
  • 1 large onion, chopped
  • 3-4 cloves of garlic, minced or chopped
  • 2-3 stalks celery, peeled and chopped
  • 2 large carrots, peeled and chopped
  • 2 cups frozen green peas, thawed

Directions
  1. Pick through and rinse beans.
  2. Place in a 4 quart pot, and cover with at least 3-4 inches of water.
  3. Bring to a boil for 2 to 3 minutes.
  4. Cover, and let stand in the refrigerator overnight.
  5. Drain and rinse beans.
  6. Place beans in crockpot with canned tomatoes, broth, white wine, and vegetables.
  7. Cover, and cook on low for 7 to 8 hours.
  8. In a skillet, cook the sausage over medium heat until done.
  9. Slice links into 1/2 inch pieces.
  10. Add meat to crockpot, and cook soup another 30 to 60 minutes.
