Potato And Goat Cheese Casserole Recipe

Ingredients
  • 1 tablespoon unsalted butter
  • 1-1/2 pounds russet potatoes, peeled, cut into 1/8 in. slices
  • 1 teaspoon garlic, minced
  • 5 oz. goat cheese, crumbled
  • salt, black pepper
  • 2 cups heavy cream

Directions
  1. Preheat oven to 350 degrees.
  2. Grease bottom and sides of 1-1/2 qt. dish with butter.
  3. Layer overlapping potato slices on bottom of dish.
  4. Sprinkle with half of garlic and 1/3 of goat cheese.
  5. Season with salt and pepper.
  6. Repeat layers.
  7. Finish with final layer of potatoes and remaining cheese.
  8. Season with salt and pepper.
  9. Pour heavy cream over top of potatoes and press to condense layers slightly. Make sure layers are completely covered with cream.
  10. Baker for 1 hour and 20 minutes, ur until bubbl and brown on top, and potatoes are cooked through.
  11. Let cool 5 minutes before serving.
