How to make it

  • Cut any roots and wilted outer leaves off leeks
  • Cut into 2 inch lengths
  • Cover with water
  • Bring to a boil and simmer for 30 minutes
  • Drain well
  • Melt butter and stir in flour
  • Gradually stir in the milk
  • Cover over low heat, stirring constantly, until thick and smooth
  • Add vinegar and salt
  • Simmer another 10 minutes
  • Serve up hot and enjoy
