How to make it

  • Saute' onion and green pepper in butter until tender
  • Mix with corned beef, potatoes and pepper
  • Mash until well mixed
  • Flatten out on wax paper to about a 1 inch thickness
  • Cut into 12 large circles
  • Brown on both sides
  • Top each with a poached egg
  • NOTE: Hash circles can be prepared in advanced and refrigerated until ready to cook
