Eggs A Hashin Recipe
This dish is a favorite with me and mine. Plus it doesn't have to be just breakfast.

Ingredients
  • 3 T. minced onion
  • 3/4 c. minced green pepper
  • 2 T. butter
  • 5 c. diced, cooked corn beef (one 12 oz can = 2 cups)
  • 2lb bag frozen diced potatoes (hash brown , diced), thawed
  • 1/2 tsp. pepper
  • 12 eggs, poached
  • salt and pepper to taste

Directions
  1. Saute' onion and green pepper in butter until tender
  2. Mix with corned beef, potatoes and pepper
  3. Mash until well mixed
  4. Flatten out on wax paper to about a 1 inch thickness
  5. Cut into 12 large circles
  6. Brown on both sides
  7. Top each with a poached egg
  8. NOTE: Hash circles can be prepared in advanced and refrigerated until ready to cook
