Eggs a Hashin

- 3 T. minced onion shopping list
- 3/4 c. minced green pepper shopping list
- 2 T. butter shopping list
- 5 c. diced, cooked corn beef (one 12 oz can = 2 cups) shopping list
- 2lb bag frozen diced potatoes (hash brown , diced), thawed shopping list
- 1/2 tsp. pepper shopping list
- 12 eggs, poached shopping list
- salt and pepper to taste shopping list
How to make it
- Saute' onion and green pepper in butter until tender
- Mix with corned beef, potatoes and pepper
- Mash until well mixed
- Flatten out on wax paper to about a 1 inch thickness
- Cut into 12 large circles
- Brown on both sides
- Top each with a poached egg
- NOTE: Hash circles can be prepared in advanced and refrigerated until ready to cook
