Buckaroo Beans

- 2 1/3 cup dried pinto or red beans shopping list
- 6 cups water shopping list
- 1 large onion, chopped shopping list
- 2 cloves garlic, minced (more if you like) shopping list
- 1 bay leaf shopping list
- 2 cups canned tomatoes shopping list
- 1/2 cup chopped green pepper shopping list
- 2 teaspoons chili powder shopping list
- 2 tablespoons brown sugar shopping list
- 1/2 teaspoon dry mustard shopping list
- 1/4 teaspoon crushed oregano shopping list
- 1/2 ob. smoked ham, bacon or salt pork shopping list
- salt to taste shopping list
How to make it
- Wash beans. Cover with water and let stand overnight.
- To cook, cover and bring to boil, cook 2 minutes.
- Remove from heat and let stand 1 hour.
- Add onion, garlic and bay leaf and return to boiling.
- Turn down heat and simmer 1 1/2 hours or until beans are almost tender.
- Add tomatoes, green pepper, chili powder, brown sugar, mustard, oregano, meat and salt.
- Bring to a boil again, reduce heat, and let cook slowly for 2 hours, or until liquid resembles a medium thick gravy.

Mmm this sounds really good. Beans are one of the only foods my little ones will both eat so I am definitely gonna try this one this weekend.
