THESE WERE NOTHING LIKE SOFT, OR CHEWY!
I AGREE WITH ENSANTAFE, THE DOUGH WAS CRUMBLY DUST, AND SO
    WERE THE COOKIES.
I DON'T KNOW WHAT WE DID/DIDN'T DO LIKE EVERYONE ELSE, BUT... ICK!

I doubled and doctored this recipe a bit. I used all brown sugar.(no white sugar) Instead of using all Vanilla extract, I decided to use a 50/50 ratio of Vanilla extract and Almond extract.(I didn't have enough vanilla) I added 3/4 of a cup of hemp seed hearts, 3/4 of a cup of chia seeds and 1/2 of a cup of coconut.(All Organic) I also added a little bit of vegetable oil to the mix to make it easier to stir.(adding all of those dry ingredients made the dough a bit stiff) Also, Instead of using sprinkles I decided to toast some coconut and dusted the cookies in that. The cookies came out very soft and chewy. The flavor was very good as all of the flavors were very well represented. Overall this recipe turned out excellent and they were aesthetically pleasing as well. Will definately make this recipe again.
Word of Advise: Make sure to be gentle with the cookies until cool as they crumble and crack very easily. They are very soft! *****

Delicious. My husband tried to eat half the batch and wouldn't have touched them if he knew they were vegan.
