Minestra Or Beans And Greens Recipe
I used to order this all the time in Italian restaurants. Now I make it at home (for less money.) Some crusty bread and it makes a whole meal!

Ingredients
  • 4 to 6 cloves garlic, minced
  • 3 to 4 slices bacon, diced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 pounds escarole, coarsely chopped
  • 2 (14 ounce) cans white kidney beans (cannelloni), drained
  • 4 cups chicken stock (see note below)
  • coarse or kosher salt
  • ground black pepepr
  • Parmesan cheese, grated

Directions
  1. In Dutch oven, heat oil.
  2. Add garlic and bacon. Saute 3 minutes.
  3. Add onion and saute 1 to 2 minutes.
  4. Add escarole and allow to wilt down.
  5. Add beans, stock, salt and pepper.
  6. Cook over medium heat 12 minutes or until greens are tender.
  7. Ladle into bowls and top with Parmesan cheese.
  8. **Note** KITCHEN BASICS makes very good quality stocks that are packaged in cardboard cartons. The are all natural and have good flavor and far less sodium than traditional canned broth.
