Lamb Lovers Special

- 6 lb. leg of lamb (bone removed) shopping list
- 1/2 garlic clove, crushed shopping list
- 1 T. scraped onion pulp shopping list
- 6 T. melted butter or margarine shopping list
- 1 T. ground ginger shopping list
- salt & pepper shopping list
- 1 c. pineapple pulp shopping list
- 1 T. brown sugar shopping list
- 2 T finely chopped parsley shopping list
- 2 c. toasted small bread crumbs shopping list
- 1 c. pineapple juice shopping list
How to make it
- Have leg of lamb boned but not rolled
- Mix crushed garlic with onion
- In a pan, put 2 tablespoons melted butter and add the garlic & onion mixture along with ginger,all the pineapple, brown sugar, parsley, salt and pepper to taste
- Saute' for 3 minutes
- Remove from stove and mix with toasted bread crumbs
- Stuff the leg of lamb and sew opening closed
- Baste with remaining butter
- Sear in a preheated 425 F oven for 5 minutes
- Reduce heat to 350 F
- Cover and bake 2 1/2 hours, basting occasionally with juices
- makes 8 - 10 servings
