Lamb Lovers Special Recipe
This is a favorite dish for my family. Especially at Passover.

Ingredients
  • 6 lb. leg of lamb (bone removed)
  • 1/2 garlic clove, crushed
  • 1 T. scraped onion pulp
  • 6 T. melted butter or margarine
  • 1 T. ground ginger
  • Salt & Pepper
  • 1 c. pineapple pulp
  • 1 T. brown sugar
  • 2 T finely chopped parsley
  • 2 c. toasted small bread crumbs
  • 1 c. pineapple juice

Directions
  1. Have leg of lamb boned but not rolled
  2. Mix crushed garlic with onion
  3. In a pan, put 2 tablespoons melted butter and add the garlic & onion mixture along with ginger,all the pineapple, brown sugar, parsley, salt and pepper to taste
  4. Saute' for 3 minutes
  5. Remove from stove and mix with toasted bread crumbs
  6. Stuff the leg of lamb and sew opening closed
  7. Baste with remaining butter
  8. Sear in a preheated 425 F oven for 5 minutes
  9. Reduce heat to 350 F
  10. Cover and bake 2 1/2 hours, basting occasionally with juices
  11. makes 8 - 10 servings
