How to make it

  • Have leg of lamb boned but not rolled
  • Mix crushed garlic with onion
  • In a pan, put 2 tablespoons melted butter and add the garlic & onion mixture along with ginger,all the pineapple, brown sugar, parsley, salt and pepper to taste
  • Saute' for 3 minutes
  • Remove from stove and mix with toasted bread crumbs
  • Stuff the leg of lamb and sew opening closed
  • Baste with remaining butter
  • Sear in a preheated 425 F oven for 5 minutes
  • Reduce heat to 350 F
  • Cover and bake 2 1/2 hours, basting occasionally with juices
  • makes 8 - 10 servings
