A very easy meal to make and can be modified to anyones tastes.

Ingredients
  • Ground Chicken (about 1 pound)
  • Flour Tortillas
  • 1 packet Taco Season Mix
  • 1 Can Black Beans
  • 1 Can Enchilada Sauce
  • 2 Cups Shredded Cheddar Cheese

Directions
  1. Cook chicken until done
  2. Add taco season mix and 3/4c water simmer
  3. Drain beans
  4. Place about 2 Tsp chicken, beans and cheese in tortilla, roll and place in casserole dish. (Makes about 8 enchiladas)
  5. Pour enchilada sauce over enchiladas
  6. Sprinkle cheese over enchiladas.
  7. Bake at 375 about 20mins until cheese is melted
  8. Serve with sour cream, japelenos, etc. to your taste.
